So I consider myself a pretty decent cook, someone who know's what they are doing in the kitchen. So can you help me out a bit and give me "American" amounts like cups, pounds, etc? Now some of these ingredients seem like stuff you have to buy at a specialty store (mussaman curry paste, cardomon seeds, fish sauce, and tamarind juice), am I right?

hi house warden - the coconut milk can be found in regular grocery stores, as can cardomon seeds. the other things you listed you'd have to go to a Thai food store (or probably a chinese food store would have them)
amounts....i don't measure too much any more, once you know how it tastes, you won't need to. but for starting out,
500 g = 1.1 lbs.
200 g = .44 lbs. or 1 cup
500 ml = 2.1 cups
hopefully this helps; if you go to google and type in "500 ml in cups" it will bring you back an answer. kind of cool.
