What's for Dinner Wednesday?


Well, for the 'real' what's for dinner wednesday, trot on over to Crib Ceiling; the lovely graphic is from Krisco, and so is this idea! in any case, i just had to try it out. i'm longing to know; what are you having for dinner tonight? or what did you have last night? And if you actually MAKE it, let us know how; post a recipe on your site and we'll visit. :)

tonight we're going to have chicken parmesan. i do *love* this dish, but the real reason we're having it tonight is because it's snowing. for some roundabout logic, please try to follow this; it's snowing, and b/c of the weather change, my migraine is worse than usual. that means that the last thing i want to do is spend time in the kitchen cooking. i want to spend ALL the time in bed, in the dark, reading or watching a quiet movie. but i digress. so the chicken parmesan is ALREADY MADE. my sister, in her older-sister-infinite-wisdom, had me over a month ago to do freezer cooking. we cooked stuff, we froze it. now i have meals to simply warm up when i need a quick meal (i.e. when my head hurts more than usual). she is so brilliant. other than that, i don't really remember how we made it; chicken, rolled in bread crumbs, and mozzerella cheese...that's the general.

to be honest, i'm most looking forward to DESSERT! (what a surprise) - we're having leftover cheesecake from last night....it turned out much better than i thought. i really liked it. so, as promised, here's the recipe for the SUPER-EASY, no bake cheesecake!

Two 8 oz. packages cream cheese, softened for 30-40 seconds in microwave
1 1/3 cup powdered sugar
1/2 TBSP vanilla

Mix these three ingredients until blended, then add
2 cups Cool WhipMix again until blended, then put into a pie crust (I prefer pre-made Nilla Wafer crusts) and refrigerate at least an hour. Top with fresh or canned fruit topping.
